Authentic Fried Rice Recipe

6 Authentic Indonesian Fried Rice Recipe ( Nasi Goreng ). Although it is not often cooked in a private home for local consumption, nasi goreng is a trendy street food treat for Indonesian people and is found almost everywhere. The dish is often topped with a fried egg.

Fried Rice with Noodles (Nasi Goreng Mawut) ingredients

  • 4 Tbsp vegetable or coconut oil
  • 100 g chicken thighs, deboned, skinned, and cut into 1-cm cubes
  • 2 Tbsp meat spice blend
  • 100 g prawns (shrimps), peeled, cleaned, deveined and cut into 1-cm cubes
  • 2 Tbsp seafood spice blend
  • 4 Tbsp vegetable or coconut oil
  • 50 g white cabbage, sliced
  • 20 g large red chillies, halved, seeded and sliced
  • 3-5 bird’s eye chillies, finely sliced
  • 1 Tbsp chilli sauce
  • 2 Tbsp salty soy sauce (kecap asin)
  • 50 g shiitake mushrooms, sliced
  • Three eggs blended thoroughly
  • 300 g rice, cooked and cooled
  • 300 g egg noodles, boiled and cooled
  • 30 g spinach, cleaned and roughly sliced
  • 30 g leek or spring onions (scallions), sliced
  • 20 g celery leaves, sliced
  • 2 Tbsp finely sliced lemon basil (kemangi)
  • 2 Tbsp fried shallots
  • salt, to taste

How to cook

  1. Marinate chicken and prawns with own spice blends.
  2. In separate frying pans, quickly stir-fry chicken and prawn for only 1 minute in boiling oil. Set aside and keep warm.
  3. Heat 4 Tbsp oil in a wok or large frying pan (preferably nonstick).
  4. Add cabbage and chillies and fry over high heat for 1 minute.
  5. Add chilli and soy sauce and fry until almost all the liquid has evaporated.
  6. Add shiitake mushrooms and fry for one more minute.
  7. Add eggs and continue to fry until eggs are scrambled and almost cooked.
  8. Add rice, mix well and fry for 1 minute.
  9. Add noodles, mix well and fry again for two more minutes over high heat.
  10. Add spinach, leek, celery and lemon basil, mix well and fry one more minute while continuously mixing.
  11. Add fried shallots and season to taste with salt.

Red Fried Rice Recipe

Ingredients

600 g of cold white rice
150 g chicken leg thigh fillets
One stalk of onion

How to cook

How to make

Note
Use rice that is not too fluffier for better results.
